Ah the Chimi! Known also as the chimichurri burger, or Dominican burger, is a feast for the tastebuds. They come in two forms, as a specially seasoned ground burger patty, or from “pierna” carved off meat from a pre-cooked leg of pork. Chimi’s come cooked in various ways. Some (the more boring ones) are cooked on a grill as a hamburger, though many love them cooked as such. But the very best are cooked on a grill over “carbon” with grilled cabbage, onions and tomatoes, followed mid-way through cooking with a salsa of their secret recipe. If you are very lucky, the bun is toasted.
